what is the program that records everything happening on your monitor. I have seen tutorials and such of people recording mouse movements, window changes, how do they do that?

For video recording and screenshots you can use Snaps Pro X. You can download it to try out at http://www.versiontracker.com. Just search under Mac OS X software. For audio recording there is Audio HiJack and WireTap.
