iCal: How can I get To-Do items to roll over

BASIC functionality of a PIM and Calendar program (ala Entourage, ACT!, etc) is the ability to schedule To-Do items for a particular day. HOWEVER, I wish NOT to see items that are due in the future. So of course I have the preference set to "Hide Todo Items with Due Dates Outside Calendar View".
That creates a problem - What if you miss an item (out sick, etc) and just want it to roll that item over to the current date until it gets done? Every other scheduler I have used does this. Am I missing something in iCal?
