Question How to permanently select a language track in Quicktime?

I have a 1.33Gig .avi movie file. It has 2 language tracks, the first default 'on' one, soundtrack 1, is in Italian. I can switch it off, switch on soundtrack 2, in English and enjoy the movie. I'm sure I've also tried deleting the Italian track. I try and save this setting but Quicktime insists it saves the move 'as'. When it does, you've guessed it, Italian's switched back on, English is switched off!

I'm currently deliberatley trying to export to H.264 direct in QT with English on to see whether it sticks.

Any ideas?
