Have you installed any "plugins" lately?

To reset an application in OS X mosey over the folder /YourHardDrive/Users/YouUserName/Library/Preferences/ and delete the files com.apple.iTunes.plist & com.apple.Safari.plist. Plus make sure you haven't got some old plugins for this applications in /YourHardDrive/Users/YouUserName/Library/iTunes/ & /YourHardDrive/Users/YouUserName/Library/Application Support/.

One last thing. Both applications deal with QuickTime's plugin system so think of any QuickTime plugins that might be causing the problems.
