I'm not entirely clear what you mean. Do you want to load ROMs onto the XBox, or run ROMs for games on your Mac?
There is a program called MacMame which can run game ROMS for most platforms.
You can FTP into a modded XBox just the same way that you can with a peecee. There are a whole bunch of tools available out there, but you need a decent FTP client, like Transmit.
