How do we Archive email in Entourage in Exchange mode ?

Not sure if this is what you need, but If you want to archive items for a purpose other than backup/restore, there's an Export-Import Entourage AppleScript created by Paul Berkowitz you can download from AppleScriptCentral.

Thank you for your fast answer. But what I need exacly is a live archive that I can consult within Entourage. The reason is simple: our Exchange server has a limit for the mailbox of the users, so when the mailbox reaches the limit, we need to archive in a file, but we need to be able to consult these email live within Entourage.

I'm not sure that script can give me that, right ?

I'm not sure if this would work for you or not.

If you just want basically a backup that you can open at any time, I think you could create a new folder somewhere on the server outside of Entourage and export to that.
