I like the sync capability of the iBook, but I'd like the computer do the work for me..
So, is there a way to set iSync handle the syncronization of iCal and Address book between my mobile phone and iBook automatically, say, once a day?

Unfortunately, iSync can only be set to synchronize with .Mac automatically. In order to sync peripherals, you will have to click the sync button in iSync. Sorry.

Just to make everything 100% clear: is it so that this cannot be accomplished with cron jobs (and possibly with shell scripting), either?

I'm not sure what third party apps can do. I am only sure that iSync does not have built-in support for this function.

I guess that's what I was looking for: no built-in support for this task. However, I just found a way to accomplish automated syncronizing with AppleScript and Cron job.
