how do I choose which application to open a file with when they're dimmed and not letting me select them?

Alex,
Typically this happens when the file you are opening is NOT associated (file type wise) with the application you are wanting to open it with.
Open a new Finder window showing your applications. Drag the file you want to open to the top of the application you want to open it with and see if allows you to do that. If so, the application should open the file and usually the file can then be associated with that application from that point on. If it doesn't, you will need to launch the application and open the file from the application and then see if you get the association.
If non of that works, tell me the file name (with suffix) and the application you are wanting to use and I can help you out further.

Thanks for the SUPER quick reply.
It's actually the disk image for the application Virtual PC 7. And it's default is set to open with Stuffit Expander because it's a document inside the disk.
But when I open with Stuffit, it says it's a locked volume and I need to select a destination.
I thought I'd be better off opening it with Installer, but it won't let me.
I tried dropping it too, and it didn't work.
I'm a novice obviously, but I really would like to get this application running becuase I've been without my printer/scanner etc for months..

Why am I getting these emails?
