I just purchased a new iMac with Intel and OS 10.4.4. My kids have many games that play in OS 9 but not Tiger... I was under the impression that we would be able to put the new mac into classic mode to use those games etc. I can't find anything on classic mode in my help.... I have a very bad feeling that something has changed.... Is that the case? And is there anything I can do?

Intel-based Macs do not support Classic. So far, only PowerPC-based Macs do, with an OS 9 System Folder installed. You may need to find your kids an inexpensive, used Mac with OS 9 on which to play their games, or you'll need to find new versions or similar games that work in OS X.

Thanks, if I wanted to install Tiger on our older machine, could it run both?

The version of Tiger that came with your new iMac is compatible with PowerPC-based Macs, but the DVD itself may not work properly on the older machine. What model was the older? Another possible option is to boot the older machine in FireWire Target Disk Mode and connect it to the new iMac, optionally booted from the Tiger install DVD. You could then select the older system as the destination. Again, though, the feasibility of this may depend on the model of the older.
