Howdy! I'm a Web Manager/Senior Designer so I understand your plight. There's a few things you can do.

First, repair permissions and restart: apps/utilities/disk utility/repair permissions.

If that does't work, then boot in safe mode and repair permissions there: restart/hold command+S till you get the black screen, white text/type fsck -f/type reboot when that process is complete.

If neither step fixes the issue (I recommend repairing permissions every month or so or when you have issues) then do a search for "Illustrator" and move any "plist" or "pref" file to the desktop, but note their locations first.

This will force Illustrator to create a new preference file so you'll lose all your presets and toolbox preferences; a small price to pay to get illustrator back up.

What font management software do you have? If you have autoactivate set for Illustrator I'd suggest turning it of. Also, what OS X and version of CS are you running?
