It seems to stop transferring after 1 GB and I have 20 GB altogether.
Has this happened to anyone else? Anyone with a solution?

You might try Restoring your iPod. Here is how to do that:
Launch iTunes (version 7). Connect your iPod to your Mac. Launch iTunes. Select your iPod in the list on the left side of the iTunes window. Now, you can Restore your iPod by clicking the Restore button. That will erase your iPod clean but you can always transfer your iTunes Library from iTunes right away. It sounds like you might have a corrupted music file on there somewhere and that's stopping the transfer or update.
Also... try trashing the iPod preference file. Here's how: Go to: MacintoshHD>Users>Library>Preferences. Open the Preference folder and locate this file: com.apple.ipod.plist Drag it to the Trash, empty the Trash, and reboot your Mac. Sometimes a corrupted file can cause problems like this also and don't worry, your Mac will create a new iPod preference file for you.
One more thing... when posting here for help, please indicate which iPod you have. I see you are using an iBookG4 with 256 of RAM. That could be another problem there... that's really not enough memory to handle heavy duty music files. You need to increase your RAM! I have an iBookG4 running 768MB of RAM. I've yet to have any problems with applications quitting or just freezing up on and too little RAM is usually the culprit.
I've given you lots of things to try... hope something helps.
