Oh, sure. You should be able to find out what causes a kernel panic. First thing to do after a kernel panic, is restart, and go straight to your console app. you should be able to tell by the time of the event when your crash occurred, and some information about what caused it. You may see (and what I would expect) that the app that uses your scanner is the culprit.

My experience has been that HP makes nice hardware, but doesn't always want to support that hardware with reliable software.
But, check those logs in your console, and get back to me with what you discover. Even if you don't understand all the entries, just scan through the log and you can tell what app contributed to the crash.
All that being said - two questions:
How much memory is installed?
Have you installed added memory fairly recently?
Marginal memory presents problems on some systems when running Panther, and in my opinion, is a leading hardware cause of kernel panics. The B&W G3 can really struggle with poor quality memory. I have upgraded 15 or 20, and some are just flaky, and intermittent. Usually the only fix is to replace ALL the memory with memory that you should get from a reliable supplier such as Crucial, who will have a good return policy.

I did add some memory a few months ago and everything seemed to be working ok.
I booted, opened Scanjet causing a kernel panic, restarted and checked the console system log. Unfortunately, I'm afraid I do not understand what I'm seeing. I'll try to paste the latter part here to see if the culprit leaps out at you.
