I would like to set-up a new G5 in an open area for many people to use. Is there any way to disable the external firewire ports?
I don't want people to connect external drives or iPods to it.
This may apply to the USB ports as well. Any help would be greatly appreciated.

I think the easy way would be to block physical access to any open ports. I would simply tape a small piece of card over an open port. Won't stop everybody, but the casual user would not spend a huge amount of time trying to find the ports. You could even attach a small metal plate with tiny screws - just position the holes over the existing holes (there's hundreds to choose from) with a screw that would hardly be noticeable.
I would do this kind of hardware block, much simpler that doing a software disable of some kind. Any sheet metal hobbyist would put something together in about 5 minutes.

I also have some iMac G5's as well.
