If you are doing a title only extraction, which I assume you are, you can change the language settings.
Under the modes section, click the button labeled "D". Then click the now activated streams button. A list of language options should now be available. (Video, audio and subtitle streams are selectable.) I'm guessing somehow you had French selected by default.
Depending on what you are doing, you may want to try the free program HandBrake, which rips to mp4 or h264 format for iPod or compressed storage. (http://handbrake.m0k.org/) It is somewhat easier to use than MacTheRipper, but does not rip actual VOB files.

With the "title - chapter" extraction you will rip files with extensions of ".m2v" and ".AC3" rather than VOB. There should be one video file ripped and a separate audio file for each language selected. The video file won't have any sound attached to it, you will have to synchronize the two files with each other. I'm not sure if you are able to use MacTheRipper to rip a VOB for only select chapters, but if you use the full extraction modes you should be able to rip whichever language you want to VOB using the same language selection method.
