The rescued items folder in your trash contains "temporary files" from an application you worked with before restarting. This is normal. You can just empty the trash. Since those are temporary files, you don't need them.

On the other hand, sometimes the trash will contained "rescued items" after a system crash. Those files are sometimes unsaved documents that you were working on before the crash.
The data of these "rescued files" is not always saved in a format you can use, however, you can sometimes extract text or graphics from them....occasionally, they are good enough to resume working with (as you were doing before the crash). Just try opening them by double-clicking or from within the application you were last working with...if they don't open that way, use a plain text editor (ie. SimpleText or BBEdit) or a Word Processor to open them and salvage the text.
Usually, though, it is best just to trash those "rescued items" unless you really need to salvage unsaved data.
