I ran Norton disk doctor and attempted to defrag the G5. After many hours of defrag, I got a message that the defrag could not be completed and needed to restart. I shut down and restarted; however, the same message is displayed: You need to restart your computer. Hold down the Power button for several seconds or press the restart button.
I have follow these instructions several times, but the computer does not restart.

I don't have much good news...
Norton Disk doctor has not been updated for nearly 5 years, and wasn't very good at that time. Had you asked about Norton Disk Doctor here, you would have read some good information. Simple - don't use it, ever...
Now it's too late, and your hard drive directory is likely corrupted badly. I had the same thing happen to me before I learned this was all caused by running the Norton software. You need a disk repair tool that will help you. If you are running 10.4 or newer, then boot to your OS X install disk, and try to repair your disk using Disk Utility from the Utilities menu. If you are using an older version of OSX, or Disk Utility doesn't help - then I suggest that you purchase a good tool like Disk Warrior, and try that on your hard drive.

After a 'repair' by Norton Disk Doctor, you may not have any good luck until your boot to your installer disk, and reinstall your system, using the archive & install option. If the archive & install option does not help (which is very possible), then you use the last option, which is Erase & install. First, back up all your important files and documents, music, pictures, etc. When you erase your hard drive, your will lose everything that you don't have backed up.
Final note - There is no important need to defrag your hard drive on any modern operating system - except for very limited needs, such as a hard drive used for audio recording, or if you allow your hard drive to get nearly full (which is not a good idea in any case)
