I have a cluster of xserves were the head node host a subnet for the cluster nodes. However, the easiest way to manage these would be from my powerbook outside the cluster network but server admin and ARD only "see" the head-node. I use NAT but I don't know how to let Server admin and ARD see thre cluster nodes.

The way to do this is simple. Having a first mac on the "outside" side of the network, using ARD, take over the xserve "head of cluster" were nat is running. Lauch ANOTHER copy (i.e another serial number) of ARD on it. This one will see the "inside" side of the network, allowing you to control any machines from your powerbook. You need another copy of ARD for this, but it can be a 10-client version as you'll see only one machine at a time (the head of cluster), regardless if this machine pilots more than 10 nodes by itself.
Same for server admin, unless the dns zone of the cluster nodes is a sub-domain of the ones your powerbook is in. In this case, open 311,625,660,1220 ports on the firewall of your nat machine from any to local (allowing this port to be access from "outside") and then from your powerbook, search for the dns name of the node you want to control. It you're not on a subdomain, use the same method : via ARD, take over the head of cluster, launch server admin on it and get control on the nodes.
