I find this panel extemely useful when playing back music in the non-Pro version: is there a feature in Pro which allows for the export of files with adjusted pitch or tempo? [Most feature info is concentrated on movies.]

There are both audio and video sections in the export options of QuickTime Pro.

Sorry, not quite. You can save new volume, bass, and treble levels by choosing them in Movie Properties instead of A/V Controls. Can't change pitch permanently, though.
