Do you want this for a computer lab or systems you manage? Are they all Macs? It is possible to connect to remote systems and view screen w/o the other user knowing, but only if you have it setup that way.
As for viewing all screens at the same time, not sure if an app exists that does that, but may... and can help find out if I find out what your trying to do.

VNC is a universal application that comes in a server/client form. You can setup VNC server on each system, and you'd be able to connect remotely. Apple includes VNC server in Mac OS X, so it is just a matter of turning on screen sharing and setting a password for screen sharing.
On Windows, you will want to download TightVNC server and install it on each of the Windows installs.
On the Mac, you can "Chicken of the VNC" to then connect to all the other systems. While you won't be able to connect to each at the same time, you will be able to access them one at a time.
