Kevin,

mDNSResponder is responsible for Bonjour - you know that thing in lets you automagically buddy everyone on the network in iChat or list all the web sites on the local network or even give you the list of afp shares on the network.

Basically it works in two ways - using multicast DNS on the local network without any need for a DNS server or if your on a larger, multiple site/subnet network it can use unicast DNS if your network administrator has set up a Bonjour DNS server for you to use (this second part is the Wide-Area Discovery).

That said, don't worry about it - it won't affect you. If you don't use iChat, you can turn off Bonjour. Go to System Preferences>Sharing>Firewall. Just uncheck iChat & iPhoto Bonjour.
