I'm a bit of a patrician when it comes to software--I simply ponied up the $499.00 for the Adobe Design Collection (InDesign, Illustrator, Acrobat, and Photoshop). All are carbonized now and work great except Photoshop, which works great but is not yet recoded. Two weeks, two weeks... I trashed Adobe Acrobat (not Acrobat Reader today) because Adobe screwed up my licensing; their solution was to issue me a new serial number (thanks, guys). Well, I used to generate PS files with Classic's "Print to a file" feature, but these days I save to PDF's in OSX. The problem is that I often use several pieces of software to generate a single 'document' (typically Appleworks and some Graphing software (I know that AW does graphs, but I need more flexibility)), so a single paper ends up being maybe 5 pdf files, if I have 4...
