You could try exporting it as a PDF and then use a convertor like Trapeze to convert to HTML. I'm not sure how well it works...never tried it myself as all my 'text' (web or document) arrives to me in a noted (markdown formatting) RTF format. I copy/paste it into BBedit and run a script one of two scripts depending on it's designation (InDesign or a web-page).

You can make plain text the default in TextEdit in the preferences and you can always change any document to plain text by selecting Make Plain Text in the Format menu. As for other text editors, I'd be hard pressed to make a recommendation as you seem to be having problems with TextEdit and other text editors (like BBEdit) tend to be more advanced.
