If you have any problems RIPing a DVD, clean it very carefully with optical wipes and or use MactheRipper to extract it first, though this adds to the time to convert it. ...

To get the main feature in a single .vob file, select the "Mode" tab and select "Title Only Extraction" from the pull-down menu. Every time I rip a movie it comes out as 4 or more seperate files. First off, how do i make it just one file and how do I get it to be a format other than .VOB? Thanks

If it has any kind of copy protection you might have to rip the DVD first with Mactheripper, then use Handbrake's iPod preset to convert the vob files to mpeg.

the DMCA only applies to USA -- so if you're in other parts of the world this may well be perfectly legal. Handbrake is great, but only if you're looking to convert the DVD to MPEG4 (like Divx or something). If you're looking to make an exact copy, you can copy the DVD straight to your hard drive with MacTheRipper. You can then burn the resulting VIDEO_TS folder to a new DVD using Roxio Toast. There are probably some free burning apps you could use, too, but I don't know which ones...

MacTheRipper can rip files off the DVD, but I don't know how you would go about adding subtitles? A quick search reveals methods for Windows, but not mac. If you want to add subtitles manually, you could rip via handbrake, and add via Quicktime Pro/iMovie/FCP, then re-burn.
