You might want to try JEdict or Jisho. I use both. They do the trick for me. Just search them on versiontracker.

For iChat, open it's Preferences, click on the Messages icon. At the bottom "Automatically save chat transcripts" and choose folder. For safari, the closet is the History, but no time or dates. You might be interested in HistoryHound.
